I haven’t posted a recipe for a while but to make it up to all of you I have got a real winner. I mean, not only is this recipe quick and delicious but it’s also easy. At my home it’s the unicorn of recipes and I’m going to share it with you today.
While I was immersed in “The Great Alone” last week I couldn’t stop thinking how perfect it would be to finish off my vicarious Alaskan experience with my favorite Salmon recipe. I’m fairly certain the Allbright’s didn’t have a few of these key ingredients to cook up their salmon exactly like this but I was willing to suspend reality for the sake of deliciousness. For the complete experience pair this salmon with a chapter from “The Great Alone” and perfection may very well be achieved.
2 (8 oz) salmon fillets
2 T sesame oil
Juice from 1 lemon
1 jalapeno pepper, seeds taken out and chopped fine
2 T brown sugar
1/4 C soy sauce
2 garlic cloves, minced
Mix all ingredients, except salmon, to make the marinade. Put salmon in marinade and chill 1 hour (turning salmon after 30 minutes).
For Grilling (preferred method): grill approximately 5-6 minutes depending on size of fillets.
For Baking: broil 8-10 minutes per inch of thickness.
